Ingredients for Veg Biryani
For the Biryani:
2 cups basmati rice
1 vegetables for a vegetarian option), cut into pieces
1 cup yogurt
Ginger-garlic paste (to taste)
Garam masala (to taste)
Salt (to taste)
Turmeric powder (to taste)
Green chilies (optional, adjust for spice preference)
Bay leaves (2-3)
Cloves (3-4)
Black cardamom (1)
Ghee or vegetable oil
Mint leaves (for garnish)
Coriander leaves (for garnish)
Method
Marinate the Vegitables (or other protein):
In a large bowl, combine yogurt, ginger-garlic paste, garam masala, salt, turmeric powder, and green chilies (if using).
Add the Vegetable pieces and toss to coat them evenly in the marinade.
Marinate for at least 30 minutes, or preferably overnight for deeper flavor.
Cook the Rice:
Rinse the basmati rice in water until the water runs clear. Soak the rice for 20-30 minutes.
In a separate pot, bring water to a boil. Add bay leaves, cloves, and cardamom.
Add the soaked rice and cook until it’s about 80% done (al dente). Drain the rice and set aside.
Assemble the Biryani:
Heat ghee or oil in a heavy-bottomed pot or Dutch oven over medium heat.
Add the marinated Vegetable pieces and cook until browned on all sides.
Add a little water to deglaze the pan and simmer for a few minutes until the chicken is cooked through.
Layer the Biryani:
Spread a layer of cooked rice in the bottom of the pot.
Top with half of the Foodea fried onions.
Add another layer of rice and sprinkle with the remaining fried onions.
Drizzle some ghee or oil on top.
Seal and Cook:
Seal the pot tightly with foil or a tight-fitting lid. You can also use a layer of dough around the rim of the pot for extra sealing.
Reduce heat to low and cook for 15-20 minutes, or until the rice is fully cooked and fluffy.
Serve:
Turn off the heat and let the biryani rest for another 10 minutes before serving.
Fluff the rice with a fork gently.
Garnish with fresh mint and coriander leaves.
Serve hot with raita or your favorite accompaniments.
